Denis's Carrot Cake

Ingredients :

  • 250 g White Flour (all-purpose) ; Farine de Blé (Type 55)
  • 250 g Sugar ; Sucre en Poudre
  • 1 packet or 11 g Baking Powder with Soda ; Levure Chimique
  • 3 g ground Cinnamon ; Cannelle Moulue
  • 2 g Salt ; Sel
  • 160 ml Corn Oil or Vegetable Oil ; Huile de Maïs ou Huile Végétale
  • 2 beaten Eggs ; Œufs, battus
  • 145 g (about 1½-2) Carrots ; Carottes
  • 130 g (about 4 rings) Pineapple ; l'Ananas écrasé (avec 30 ml le jus)
  • 5 ml Vanilla Extract ; l’Extrait de Vanille
  • 65 g chopped Walnuts ; Noix coupées

Preparation :
Grate the Carrots.  Cut Pineapple rings into 1 cm cubes.  Sift the Flour, Sugar, Baking Power, Cinnamon, & Salt into Large mixing bowl.  Add Corn Oil, Eggs, Carrots, Pineapple (with 30 ml juice), Vanilla & Walnuts.  Mix until moist.  Beat with beaters or medium speed with electric mixer (robot de cuisine), for 2 minutes.  Pour in to Greased & Lightly Floured baking pan, 22 cm x 30 cm x 5 cm.
Bake at 180° C or Gas Mark 4 for 35 minutes.
Allow to cool in pan for about 10 minutes before removing from pan.  Then allow cake to continue to cool.

Variation :
Frosting with a Butter Cream Frosting is optional.

Hint from Denis :
Can be served at room temperature.
Can be made in advance & stored in refrigerator for future serving.
