Nancy's Macaroni & Cheese Casserole

Macaroni & Cheese

Ingredients :

  • 190 g Macaroni
  • 500 g Cheddar or Mimolette
  • 115 g Butter, (Real, not Margarine) ; Beurre
  • 750 ml to 1 litre Milk ; Lait

Preparation :
Cook & Drain Pasta.
Cut 425 g of Cheese into 1 cm chunks or cubes, reserving 75 g for topping.
Use a 30 cm x 20 cm x 5 cm oven casserole dish & grease dish with Butter.
In a large bowl, with Macaroni still freshly ''Hot'', stir Macaroni, remaining Butter, Cheese chunks & a splash of Milk together until ''stringy'' (in cooler climates, you may need to heat mixture slightly in microwave to maintain warmth), then spread into casserole dish.
Fill casserole with Milk until it reaches just to the top of mixture.
Press down lightly on mixture to force air out of the Macaroni & allow them to fill with milk.
Add more Milk until it reaches just to the top of mixture again.
With remaining Cheese, grate over the top & covered entire surface.
Bake at Bake at 180° C or Gas Mark 4 for 40 minutes to 1 hour, until top begins to darken & crisp & milk is absorbed.

Serve hot with main dish.

Freezes well & can be heated in microwave for future meals.
